Michael Monahan
Executive Chef
For Chef Michael Coleman Monahan, the path into cooking professionally was a sinuous one, wending its way from the northeast in his hometown of Boston, down the coast to Florida, and ultimately meeting in the middle where he resides in North Carolina. Michael has been cooking since he was 14, working on weekends and in the summers learning the details of how a kitchen works. At 27, hard work paid off when he was given an apprenticeship with Daniel Schurr at the AAA/Four Diamond Second Empire Restaurant & Tavern. In this arena, Monahan was given an opportunity to work with some of the most unique and exquisite ingredients from around the world. After fine tuning his craft he was given his first Executive Chef position, at Prime Only in Raleigh, North Carolina. It was here, Michael was given the opportunity to run his own kitchen, which led to his passion for pure flavor profiles. He brought his ambitious attitude to Greensboro where he now resides as the Chef at the Cardinal Golf & Country Club, a McConnell Golf Property. It is here he provides members a mix between his upscale dining experience and deep south decadence. When Michael is not busy in the kitchen he likes to spend his time working as a blacksmith. He has hand forged chef knives, many of which have been donated to various non-profit organizations.
